Plum & Halloumi Skewers with Tahini Dressing

Sweet plums and salty cheese go beautifully drizzled with creamy, nutty, tangy tahini.

Ingredients

  • 250g halloumi
  • 6 plums, halved
  • 1 dash rapeseed oil
  • 6 tbsp tahini
  • 1 lemon
  • 100ml water
  • 1 clove garlic, crushed
  • 1 tbsp honey
  • 20g fresh coriander, leaves very finely chopped
  • ½ tsp sea salt

Method

Step 1

If you’re using wooden skewers, soak four in water while you prepare the ingredients.

Step 2

Mix all the dressing ingredients together in a bowl and set aside for the flavours to develop.

Step 3

Chop the halloumi into 12 large chunks. Thread the halloumi and plum halves onto the skewers, alternating as you go – there should be 3 pieces of halloumi and 3 halves of plum on each one.

Step 4

Preheat your griddle pan (or barbecue) to high while you brush the skewers with rapeseed oil and season with pepper.

Step 5

Lay them into the hot pan and lightly char for around 3-4 mins on both sides – keep them still if you want the nice stripes!

Step 6

Remove from the heat and serve right away with the tahini dressing drizzled over the top.
