- A semi-hard sheep's cheese made from fresh ricotta, drained and hand salted with coarse sea salt.
- We source this from the Caruso family near the Erei mountains in central Sicily.
- The Carusos work with small farmers in the region to bring in the milk of native breed sheep.
- Flocks are moved from the mountains to the valleys, feeding on pasture – a rich local diet which informs the flavour of the cheese.

Hard to find specialty ricotta!
Critical ingredient for many Sicilian, Calabrian and other southern Italian dishes - this is a hard cheese, nothing like the soft ricotta we are mainly used to in this country. So pleased its sold on Ocado! Also, mine has lasted for quite some time after the use by date, as long as its stored well and cut with a clean knife.

I didnt like the texture, which was rubbery, and there was no taste whatsoever other than salt.

I've tried to be balanced in this review... Cons: very little flavour other than salt. Does not melt. Quite hard texture which I did not enjoy. Pro: Grates very well
Great sprinkled over pasta
Im surprised by the negative comments on the saltines of this cheese. It makes great accompaniment to pastas when grated. And it doesnt go off easily, stores ages in a tight container in the fridge. Just remember to place a paper towel inside to absorb moisture.
