Natoora Italian Monk's Beard
- We source Agretti, also known as Monk’s Beard, direct from their native growing region of Lazio.
- Grown with minimum intervention, they take on a subtle minerality from the soil. Their thin, crisp fronds can be eaten raw or cooked.
- Historically, agretti was grown for its salt ash and used by Murano and Venetian glass-blowers to - clarify their glass. They have since become an integral part of Roman spring cooking.
- Trim off the white base and the roots of each strand before use.
Take it further
- Toss raw with lemon oil and seasonal leaves.
- Blanch, serve with grilled fish.
Natoora's radical approach to seasonal sourcing is shaping the future of food
- We are revolutionising the food system.
- We work direct with growers who value flavour, biodiversity and heritage over yield.
- We give them the support they need to build a better future for food, rooted in small scale, sustainable agriculture that gives back to our planet.

First time buyer
These were delicious stir fried with garlic and chilli flakes. Similar consistency to bean sprouts but with much more flavour.
Wonderful
Lovely and fresh, and when cooked with a little lemon it is delicious. I will be purchasing again soon. My family really enjoyed it.
SPLENDID!
Tried this for the first time- splendid! After washing thoroughly (lots of soil), I trimmed off the roots, blanched in boiling water, drained and tossed with EVOO, lemon, sea salt! Impressive!
cross between samphire and asparagus
Delicious. Served raw or cooked. Yum
unusual and rather nice
Bought this on flash sale as something new to try. Popped in boiling water, then switched off, left for 2mins, drained and tossed in a little olive oil & lemon. Yummy. Fresh, different and lovely with some fresh fish
I wanted to believe good reviews as on flash sale
Sadly, the reviews about how rotten it can be were correct. I used it first day after the delivery having read reviews that recommended that. I really wanted to be able to like it and I hate throwing out food- I even asked hubbie if he thought edible. I would like to try it again though....but have had to request a refund for what we had delivered. I expect it varies too.
