The germination process encourages production of vitamins, nutrients and amino acids in the rice kernel in preparation for growth. When the maximum possible nutrition level is reached after 24 hours, we parboil it, locking in all the added vitamins, nutrients and amino acids, especially gamma-aminobutyric acid (GABA).

Preparation and Usage
Add 50g of rice with 350mls of water (can be adjusted).
Rinsing not needed.
Place rice and water together in a pot with a lid.
Bring to the boil, then reduce heat to simmer and cook for 40 minutes.
Remove from heat and allow to rest for at least 10 minutes.

very good quality rice
It is very good rice and organic! Worth paying a full price as well!
great taste, texture & easy on digestion
I enjoyed everything about this rice, and would buy it again, despite the relatively high price.
Awesome!
Sure this is costly, but it's of fantastic quality; the lightly sprouted grains allows for release of locked nutrients, making them easier for us to digest. The organic part obviously makes it safer and cleaner for the environment. We really like this product as we tend to use it in small amounts along with a variety of different rice and grains for a wholesome nutritious nutty carbohydrate side for most of our meals. If you wanted to use it on its own though, the size of this item and its price make it a very costly investment if you're a regular rice eater. Furthermore, eating too much of this on its own in one go will lead to wastage because it's got a great fibrous bran layer, you'll know what I mean after you go to the loo the next day! (Sorry, but it's important to know for those who will purchase this to try and be super healthy)! Just using a small amount mixed with another rice (e.g. 20% black rice, 80% white rice) works neatly, and the colour from the black rice will make all the rice a nice rich purple colour.
Strange discolouration
I have decided to soak for a bit these perfectly black grains as feeding my toddler with the rice. There is a really strange discolouration in probably 20% of the grains which occurred after 20min I’m not sure if this is normal but if food branded as “organic” has been dyed what is the dye and is it harmless???
BEWARE of stones!!!
I almost broke my tooth by chewing on a 5mm black stone. Apart from that the rice is ok, I prefer the Italian one though
Rice pudding extraordinaire
The first time I experienced black rice was at a Greek restaurant, it was enhanced with coconut and sweetened with mango because it appeared on the dessert section of the menu. Since then I have wanted to find a way to incorporate this into my repertoire at home and the perfect solution for us is to cook overnight with organic rice milk in the slow cooker, adding cinnamon, vanilla and organic coconut sugar to taste. It is amazing and my teenage sons love it for breakfast. They are both allergic to dairy, nuts and seeds so I am relieved & happy to find something that is equally nutritious & delicious. I highly recommend this product!
