Pastry
175g Organic Plain
Light Brown flour
A good pinch of salt
50g walnut pieces
100g unsalted butte, chilled and diced
1 large free-range egg yolk plus 1-2 tablespoons cold water
Filling
400g broccoli florets
100g Stilton
3 large free-range eggs
200g half-fat crème fraiche
100ml milk (not skimmed)
Small bunch of chives
Salt and pepper
23cm/8 1/2 inch loose-based flan tin and a baking tray
Method
1. Place the flour, salt and nuts into a food processor and 'pulse' to a fine powder. Add the butter and process until the mixture resembles fine crumbs. Add the egg yolk and water and process until the mixture comes together.
2. Wrap and chill the dough until firm - about 20 minutes. Turn out onto a lightly floured work surface. Knead for a few seconds until smooth.
3. Roll out the dough to a circle about 27cm across. Roll the pastry around the rolling pin and lift over the tin. Carefully press the dough onto the base and sides. Prick the base several times with a fork. Chill for 20 minutes.
4. Heat the oven to 170°C fan/190°C/ 375°F/Gas 5. Line the pastry case with no-stick baking parchment and weigh down with baking beans. Bake for about 15 minutes until firm.
5. Remove the paper and beans. Bake the empty case for 5 minutes until crisp.
6. Reduce the oven temperature to 150°C fan/170°C/325°F/Gas 3 and put a baking tray in the oven.
7. Blanch the broccoli in boiling water for 3-4 minutes, or until tender. Rinse and drain.
8. Arrange the broccoli in the pastry case and crumble the Stilton over the top.
9. Combine the eggs, crème fraiche and milk in a large jug. Snip in the chives and season. Whisk to combine the pour over the broccoli and cheese.
10. Set the tart on the heated tray. Bake for about 40 minutes until firm and slightly golden.
Leave for about 10 minutes before cutting.
Best eaten the same day.
Recipe Tip
For a sweet pastry, replace the salt with 45g sugar.

Best flour
I made an apple crumble with this flour today. It was the best crumble I've ever made or even tasted. My daughter was well impressed.
Makes lovely pastry and good in cakes
We like to use this in pastry and cakes as it adds to the overall flavour of baked goods but isn't as heavy as wholemeal. My husband is the pastry chef (well for shortcrust - we buy in flakey!) and for an 8oz - sorry for old measures - mix, 6 ozs of this to 2 of rice flour for an exceptianally light pasty, which is very forgiving when rolling out
versatile
Ok, so this won't turn our pancakes or chocolate chip cookies into a health food but it should provide a bit more fiber. Having read Seafood's review below and then visited Marriage's website, I surmise that as 81% brown flour, this will have had 19% of the whole grain removed. I also understand that, by law, all UK flour which is not wholemeal has iron added to it (among other things).

Mostly plain white flour,no Wholemeal listed
Having worked in food industry I know wholemeal-wheat flour if added would & should be listed as wholemeal wheat in the ingredients list.. Looking at the ingredients list of this product,there is no mention of Wholemeal wheat flour, only listed wheat flour which means majority of this product,probably 95% or more of it is very likely white wheat flour( plain white flour) since in the food industry Plain Wheat flour is labelled as simply Wheat flour so this product if it contains any wholemeal flour at all,probably contains only a tiny amount of wholemeal added. I noticed in the ingredients list,iron is added which gives white flour a brownish tinge so the flour may appear brown compared to plain white flour but unless the ingredients list lists Wholemeal wheat flour as one of the ingredients,I personally do not trust that this product is much different to any other plain white flour. Otherwise wholemeal would have been listed in the ingredients list. I find this very misleading as the description implies this product contains a decent amount of wholemeal & therefore a healthier choice!
Great brown flour
Glad to see this available. It's tasty, organic and not too heavy so it bakes up well. My sourdough starter likes it too.
