Spinach & Tomato Quiche
1. Roll out shortcrust pastry onto a lightly floured surface press into quiche dish and chill for 20 minutes.
2. Blind bake the pastry for 25 minutes at 180°C/ Gas mark 4.
3. In a saucepan, gently fry cherry tomatoes in olive oil. Stir in spinach until wilted and season.
4. In a large bowl, mix eggs, cream and basil then season.
5. Scatter grated cheese over the tart base add the tomatoes and spinach, then pour over the mixture.
6. Bake for 20-25 minutes until lightly golden.

a regular purchase
Never used to buy grated cheese but it does just save so much time. Always get the light version and cant tell the difference now. The price has gone up but its the case with many food items
