Valpolicella Classica is a terroir where the cold winds of the Alps meet the warm breezes of Lake Garda Soil types, of different pedologic origin, are calcareous and basaltic volcanic.

Vinification Details
Ripe grapes are macerated for about 15 days in stainless steel fermentation tanks at controlled temperature, using techniques designed to extract each variety's best fruit and spice traits. The wine is then aged for 6 months, part in steel and part in concrete tanks, then bottled in March and April.

Acceptable
Acceptable. Medium nose with aromas of red and black fruit (cherry, plum, cranberry, blackberry, blackcurrant) with a hint of spice – simple, but enjoyable. Matching intensity on the palate that is quite savoury and balances well with the high acidity and medium aclohol. Medium(-) finish. Dry, medium(-) tannin, medium body. I’d pair it with salami or prosciutto to bring out the body and intensity.
