Katsuobushi, or dried bonito flakes, is one of the essential ingredients for making Japanese soup stock called "dashi". Consisting of paper-thin shavings of dried and smoked bonito which resemble large wood shavings, Yutaka Katsuobushi uses fresh, high quality bonito from Spain, carefully put through a long drying process and sealed to lock in the flavour. When used in dashi, Katsuobushi adds depth of flavour and umami to soups, hot pots and stews. It is also used to garnish tofu, udon noodles and salads.

Preparation and Usage
1 Add 500ml boiling hot water and 20g (adjust to your preferred taste) Katsuobushi in a sauce pan.
Simmer for 1 minute. Turn off the heat and wait for 2-3 minutes until Katsuobushi settle down to the bottom of the saucepan.
2 Drain the katsuobushi with a sieve and add the stock to your Japanese cooking such as: udon / soba noodles, miso soup, hot pot or stewed dishes.

Disappointingly bland
I have had bonito flakes in dishes before and was looking forward to using them myself to add some umami to my own cooking. However, these were disappointing as they failed to deliver that flavour hit. They were rather bland and added very little to the taste of my food, despite me using quite a lot of them. Additionally, a lot of the flakes were very large, with some being around 3 inches in length! I may try another brand but will not purchase this product again.
There are some better ones...

Cupboard regular
Good smoky umami flavour. Sprinkle it on hot food like okonomiyaki and you can watch the flakes start dancing.
A bit bland
I find these a little bit bland for using as a topping
great for taste enhancing
Great to use it with soy source! I boil or steam some veggies then sprinkle this on the top along with the soy sauce.
