Ingredients:
For the Potato Salad
320g Total Greek Yoghurt
750g baby new potatoes, halved if larger than bite-sized
4 tsp roughly chopped coriander
1 large ripe avocado, peeled, stoned & diced
Zest & juice of 1 lime
For the Omelette:
80g Total Greek Yoghurt
5 tsp sunflower oil
2 small onions, finely sliced
2 large chillies, finely chopped
2 large peppers, chopped
8 medium eggs
40g finely grated Parmesan
Method:
Boil the potatoes for 12-15 minutes until tender, then drain and cool.
Heat 1 tsp oil in a large frying pan, add the onion and cook for 3 minutes until just softened. Add the chillies and pepper and cook for 5-6 minutes. Take off the heat.
Whisk the eggs with 80g Total Greek Yoghurt and season well. Heat 1 tsp oil in a medium non-stick frying pan, and add the egg mixture to cook the omelette.
Add a quarter of the pepper mixture and 10g of Parmesan. Cook for 1 minute further until deep golden, fold and transfer to a warmed plate.
Repeat to make a further 3 omelettes and until all of the mixture has been used.
Mix the cooled potatoes with coriander, the Total Greek Yoghurt, avocado, lime zest and juice, season and serve with the omelettes.

Great yoghurt
I really like this yoghurt. I enjoy how thick it is and the taste is really great. I find that it keeps me full for longer too
High quality Greek yogurt with live cultures
I'm Greek and I still remember when back in the 80's I visited the FAGE factory in the outskirts of Athens with my primary school class. For more than 40 years now, Total yoghurt recipe has remained unchanged. Really happy I can buy it in the UK where no other strained yoghurt options are available. "Greek style" yoghurts lack in taste, texture, and most importantly don't have the live cultures that make the Greek yoghurts unique. Ideal to make your own yoghurt at home. The only thing I'm not happy with is shrinkflation, as the UK products are smaller than the original products sold in Greece. This tub should be 500grams instead of 450 grams.
Can't be beat.
This is easily the best Greek yoghurt. Smooth and creamy taste and consistency. Big plus, it has a lid!
