Ortiz buy their Cantabrian anchovies daily from auctions along the north coast of Spain and process them the same day. They are put into salt for a period of 6-12 months depending on the size of the fish. When ready, they are gently washed, to remove excess salt, and the fish are trimmed and filleted by hand.

Preparation and Usage
Ortiz anchovy fillets are a perfect tapa just by themselves and also with some piquillo pepper strips. It is also a great ingredient a huge number or recipes like salads, pizza (or in the anchovy and onion tart), sandwiches or sauces for pasta.

Be aware...
Watch out if this is a gift purchase - as previous reviewers have said, there is no fork included with the jar, which is false advertising. The product itself is good quality, but the way it's advertised is misleading.
Totally incorrect nutritional information
Almost none of the nutritional information lines up, most notably that its actually 12g salt per 100g.

Yes they are expensive, a little too expensive. They are the best anchovies I've been able to purchase in the UK, soft without any noticeable bones.
Fork
The anchovies were nice but the picture showed the jar with a fork. This was my reason for purchasing so I am disappointed. Would have made a lovely little foodie Christmas gift if it had the fork

I walked past huge Kilner jars of anchovies in the supermarket in Sicily and foolishly didnt bring any home. These are the closet Ive found. The price is eye-watering but they are good enough to eat one-by-delicious-one
